Central Arizona College offers a comprehensive curriculum designed for individuals with a minimum of two years of institutional food service management experience that meets the eligibility requirements of ANFP Pathway III to take the CDM Credentialing Exam.

Comprehensive Curriculum

NTR105 – ServSafe Certification Preparation ONLY (1 credit)
NTR223 – Food Service Mgmt. (3 credits)
NTR240 – Clinical Nutrition (3 credits)

*Please note that as of FALL 2019, all classes taken for this certificate need a grade of a C or better to be considered a successful course completion.

Registration Steps

1) Apply for Admissions Online (“Apply Now” link under “Admissions” tab)

  • Application Notes:
    • Under “Program of Study,” please select:
    • Your program of interest: Certificate
    • Your program version: Certified Dietary Mgr, Cert. Food Protection Prof. Certificate
    • Your start date: TYPE IN the semester you will start taking classes (i.e. spring 2020)
  • After you have completed the application process to CAC, a message is sent to the email address you provided which will include your login and password for the CAC student portal.
  • Students must login to the portal to complete the application. Please double check your spam filter or junk mail folder.
  • You will also receive an Acceptance Letter (through US mail) that will include your CAC student ID number and your CAC Student Email Address.

2) Register for Classes

  • After you obtain your CAC student ID number and CAC Student Email Address, login into your Student Portal (My CAC) and register for your classes.
  • If you need assistance registering:
    • Send an email to nutrition@centralaz.edu that included the following:
      • First and Last Name /CAC Student ID Number
      • Semester/Term and Class Prefix & Number (example: fall 2019, NTR223)
    • Or call 800-465-1016 or 520-494-5497

3) Arrange Payment

  • Payment of tuition and fees is required at time of registration. (CAC accepts Visa and Master Card, Purchase Order, Checks, and Money Orders).
  • Make your tuition payment by logging into your student portal or by calling the Cashier at 520-494-5240.

4) Order Textbooks 

Order textbooks online through the CAC Official Bookstore centralaz.bncollege.com

      • Choose Campus: Signal Peak
      • Term: Semester you are enrolling in
      • Dept.: NTR
      • Course: Course Number (ex:105)
      • Section: Select CRN / Course Number (Course Reference Number)

5) Start review of Online Learning with Blackboard

  • Learn about Blackboard, the course management system used at Central Arizona College to deliver online classes.
  • The Blackboard link reviews all of the technical requirements and types of materials used in our online classes – handouts, syllabi, calendars, additional materials that the students might be interested in, etc.
  • Visit the Blackboard link at www.blackboard.centralaz.edu.
  • After signing into Blackboard, you will find tutorials to review listed in the menu on the left.
  • For information on how to find your classes in Blackboard, please refer to the Directions to Find Your Class in Blackboard (series of screen prints to help you navigate this process in Blackboard).

After completing the Three Courses

  • Upon successful completion of the three NTR courses, students must send an email to nutrition@centralaz.edu to confirm their personal information.
    • Please note that as of FALL 2019, all classes taken for this certificate need a grade of a C or better to be considered a successful course completion.
  • The email must include:
    • First and Last Name
    • CAC Student ID Number
    • Mailing Address
    • Phone Number
    • Graduation Application if not already submitted: Graduation Application  
  • A Letter of Course Completion with the Pathway IIIb Verified Logo from the Dietetic Education Program will be emailed to you.
    • You will need this letter and the information below to submit to ANFP to be eligible to take your exam.
  • Eligibility Requirements to be submitted to ANFP:
    • CDM Application
    • Employment Verification
    • Letter of Course Completion from the Dietetic Education Program with the Pathway IIIb Verified Logo
  • An official CAC Certificate will be mailed 4-6 weeks after a student completes the required classes (Note: A student’s official CAC certificate does NOT need to be submitted to ANFP to take the exam. Only the letter from the DEP department with the ANFP Pathway IIIb Verified logo is needed to sit for the exam.)
